Grilled Chicken Fruit Salad

INGREDIENTS:

  • 8 oz Grilled Chicken

  • Spinach

  • Sliced Red onions 

  • Blueberries

  • Strawberries

  • Chopped Pecans

  • Crumbled Feta Cheese

  • Jen's Blueberry Poppy Dressing

How to prepare: Wash spinach and place in medium bowl. Add fresh cut red onion, strawberries, blueberries, chopped pecans, crumbled feta cheese. Toss / mix all contents.  Plate salad mix and add chicken. Top with Jen's Blueberry Poppy Dressing

Serves 1 persons

SHRIMP MANGO LETTUCE WRAPS

INGREDIENTS:

  • 8 ounce (medium) Ready Cooked Shrimp

  • Chopped Red Pepper (1/2 cup)

  • Chopped Avocado (1/2 cup)

  • Shredded Carrots (1/4 cup)

  • Chopped Mango (1/4 cup)

  • Chopped Red Onion (1/4 cup)

  • Chopped Pineapple (1/4 cup)

  • Lettuce Leaves or Preferred Wraps

  • Jen's Sweet Poppyseed Dressings

How to prepare: Combine shrimp, fruit and veggies in medium bowl and mix. Spoon shrimp mixture onto each wrap. Add Jen's Sweet Poppyseed Dressing. Fold wrap and enjoy!

Watermelon Salad

INGREDIENTS:

  • Spring Mix Fresh Greens

  • Watermelon *cut in cubes

  • 3-5 Fresh Mint leaves -Chopped

  • Pistachios -Chopped 

  • Crumbled Feta Cheese

  • Jen's Raspberry Vinaigrette Dressing

How to prepare: Wash and place fresh spring mix into bowl. Add fresh chopped mint, cubed watermelon, pistachios and crumbled feta cheese. Toss / mix all contents. Add Jen's Raspberry Vinaigrette Dressing

Serves 2 persons

SWEET GRILLED CHICKEN WRAPS

INGREDIENTS:

  • 8oz Grilled Chicken

  • Red or Green Bell Peppers 

  • Chopped Tomatoes

  • Sliced Red Onion

  • Lettuce or Choice of Greens

  • Preferred Wraps

  • Jen's Sweet Poppyseed Dressings

How to prepare: Combine your choice of greens with veggies in medium bowl. Add desired amount of Jens Sweet Poppyseed Dressing and mix. Spoon greens mixture onto each wrap, followed by your slices of grilled chicken. Add Jen's Sweet Poppyseed Dressing on top. Fold wrap and enjoy!

SWEET & CRUNCHY BLUEBERRY BROCCOLI SLAW

INGREDIENTS:

  • 1 Package Broccoli Slaw

  • Fresh Blueberries : 1/2 to 3/4 cup

  • Candied Pecans : 1/4 cup (optional)

  • Jen's Blueberry Poppyseed Dressing

How to prepare: Mix package of broccoli slaw into bowl with Jen's Blueberry Poppyseed Dressing. Let sit over night in refrigerator. Next day, pull out and add Fresh Blueberries and candied pecans. Mix until ingredients are even throughout the slaw. Add a little more Blueberry Poppyseed Dressing and Enjoy! 

Serves 6-8 persons

BLUEBERRY SPINACH SALAD

INGREDIENTS:

  • Baby spinach (Rinsed)

  • Fresh Blueberries : 1/2 to 3/4 cup

  • Crumbled Blue Cheese

  • Red Onion (optional)

  • Jen's Blueberry Poppyseed Dressing

How to prepare: Rinse and place spinach on plate or in bowl. Thinly slice red onion. Add desired amount of fresh blueberries and crumbled blue cheese. Lastly, add Jen's Fresh Blueberry Poppyseed Dressing and enjoy!
